National Sticky Bun Day is February 21st – oh yeah!
As I reviewed my own recipes, I realized that I have never made these delicious naughty delightful breakfast breads. Though I have made breads very close to this, this wouldn’t stop me from researching to find the very best recipe out there for you to try!
Upon my research, I did find that Ina Garten’s seemed to be one of the more popular recipes out there. And I also note, as I read the various reviews, some people suggested using less butter, warned that these would be bigger than initially imagined and lastly, these are one of those few times a year treats to share and make for those special morning brunches…
(I have made a few suggestions of my own at the end of the Ina’s recipe for various toppings)
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 1/3 cup light brown sugar, lightly packed
- 1/2 cup pecans, chopped in very large pieces
- 1 package (17.3-ounces/ 2-sheets) frozen puff pastry, defrosted
For the filling:
- 2 tablespoons unsalted butter, melted and cooled
- 2/3 cup light brown sugar, lightly packed
- 3 teaspoons ground cinnamon
- 1 cup raisins
Preheat the oven to 400 degrees F. Place a 12-cup standard muffin tin on a sheet pan lined with parchment paper.
In the bowl of an electric mixer fitted with the paddle attachment, combine the 12 tablespoons butter and 1/3 cup brown sugar. Place 1 rounded tablespoon of the mixture in each of the 12 muffin cups. Distribute the pecans evenly among the 12 muffin cups on top of the butter and sugar mixture.
Lightly flour a wooden board or stone surface. Unfold 1 sheet of puff pastry with the folds going left to right. Brush the whole sheet with the melted butter. Leaving a 1-inch border on the puff pastry, sprinkle each sheet with 1/3 cup of the brown sugar, 1 1/2 teaspoons of the cinnamon, and 1/2 cup of the raisins. Starting with the end nearest you, roll the pastry up snugly like a jelly roll around the filling, finishing the roll with the seam side down. Trim the ends of the roll about 1/2-inch and discard. Slice the roll in 6 equal pieces, each about 1 1/2 inches wide. Place each piece, spiral side up, in 6 of the muffin cups. Repeat with the second sheet of puff pastry to make 12 sticky buns.
Bake for 30 minutes, until the sticky buns are golden to dark brown on top and firm to the touch. Be careful – they’re hot! Allow to cool for 5 minutes only, invert the buns onto the parchment paper (ease the filling and pecans out onto the buns with a spoon) and cool completely.
Chef Maven’s recipe suggestions to Ina Garten’s recipe for Sticky Buns:
- To filling, add raisins, currents, or various dried fruits. I would up the amount of cinnamon suggested here in this recipe and add a bit of of freshly ground clove and nutmeg.
- Other ideas could be adding a bit of sweetened coconut (1/3 cup) to the rolled out dough when adding your filling.
- Do not like pecans? Try chopped walnuts, sliced and blanched almonds or even freshly toasted and chopped hazelnuts.
- Want to be super decadent? Add a little bit of semi-sweet chocolate chips sprinkled throughout the filling layer for that oh so good chocolate taste!
- For the dough, I would use only one stick – not the 12 tablespoons as called for in the recipe. Yes, this will reduce the number of calories and ‘gooeyness’ slightly, but your heart may just thank you!
I do love many of Ina Garten’s recipe, and she is certainly one of those few people, I would most certainly love to entertain with and for. Her style, personality and panache is beyond most people and she really is that lovely I hear in person. 1994 Whirlpool began manufacturing a refrigerator that was significantly more efficient, and did not use freon. Freon has been implicated in the destruction of ozone in the atmosphere.
